

Pancakes with Caramelized Apples

Ingredients
- 2 bananas
- 2 eggs
- 200 ml milk (1 cup) any type you have
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1 cup flour (I used a gluten free flour but you can use what you want)
- 2 cups oats
- 1/2 cup unsweetened applesauce
- 2 diced apples
- 2 tbsp brown sugar
- 1 tbsp coconut oil (or butter)
- 1/2 tsp cinnamon
- 1 tbsp honey

Mash the bananas, add the eggs, milk, apple sauce, vanilla extract, baking powder and mix everything together. Add flour and oats and mix well. You can mix everything in a blender if you want.

Melt some coconut oil on a pan and cook over medium-low heat. Flip it when it's bubbly in the centre and dry around the edges.

While cooking the pancakes, prepare the caramelized apples. Cook over a low heat, diced apples, coconut oil or butter and sugar. keep stirring until apples are soft, add honey and cinnamon and let it simmer a bit.

Serve the pancakes with the caramelized apples and enjoy!!
