SEAFOOD AND RICE STUFFED PEPPERS

Ingredients

  • 4 bell peppers
  • 2 tbsp olive oil
  • 1 red onion, chopped
  • 2 cloves garlic, chopped
  • 1 cup mushrooms sliced
  • 1 carrot shredded
  • 1 red bell pepper diced
  • 300 gr squid (or shrimp)
  • 1 1/2 cup cooked basmati rice
  • 3/4 tsp sea salt
  • 1 tsp ginger
  • 1/4 tsp black pepper
  • 1/2 tsp curry
  • 1/2 tsp red pepper
  • Shredded maasdam cheese (or any kind)

Instructions

  1. Cut the top of peppers (remove seeds) and cook them in boiling water for 5 minutes. 

  2. Remove peppers from water and drain well. 

  3. In a large skillet, heat oil over medium heat. Add onion, garlic, shredded carrot, cover with a lid and leave for 3-4 minutes. Add red bell pepper, mushrooms and cook for 10-15 minutes, stirring frequently. Next, add squid or shrimp, sea salt, ginger, black pepper, curry, red pepper and cook for another 8-10 minutes.

  4. Finally pour in cooked basmati rice and combine everything together.Stuff peppers with this mixture and top with cheese.

  5. Place the peppers in a 350° F (180° C) oven for about 25 minutes.

POIVRONS FARCIS AU RIZ ET AUX FRUITS DE MER

Ingredients

  • 4 poivrons
  • 2 c.s. d'huile d'olive
  • 1 oignon rouge haché
  • 2 gousses d'ail, hachées
  • 4 grands champignons en tranches
  • 1 carotte râpée
  • 1 poivron rouge coupé en dés
  • 300 g de calmars (ou de crevettes)
  • 320 g de riz basmati cuit
  • 3/4 c.c. de sel de mer
  • 1 c.c. de gingembre
  • 1/4 c.c. de poivre noir
  • 1/2 c.c. de curry
  • 1/2 c.c. de poivre rouge
  • Maasdam râpé (ou autre)

Instructions

  1. Coupez le haut des poivrons (enlevez les graines) et faites-les cuire dans de l'eau bouillante pendant 5 minutes.

  2. Retirez les poivrons de l'eau et laissez refroidir.
  3. Dans une poêle, chauffez l'huile à feu moyen. Ajoutez l'oignon, l'ail, la carotte râpée, couvrir et laisser cuire 3-4 minutes. Ajoutez le poivron rouge, les champignons et cuire pendant 10 à 15 minutes. Ensuite, ajoutez le calmar ou les crevettes, le sel, le gingembre, le poivre noir, le curry, le poivre rouge et laissez cuire 8-10 minutes.
  4. Enfin, verser le riz cuit et mélanger le tout. Répartir la farce dans chaque poivron et parsemer de fromage.
  5. Enfournez les poivrons dans un four à 350° F (180° C) pendant 25 minutes.
