BANANA OATMEAL MUFFINS

Ingredients

  • 2 bananas
  • 2 eggs
  • 1 cup greek yogurt
  • 6 tbsp melted coconut oil
  • 2 cups rolled oats
  • 1/2 cup cornflour
  • 1 tsp vanilla extract
  • 2 tsps baking powder
  • 1/2 cup chocolate chips
  • a pinch of salt

Instructions

  1. Preheat oven to 350° F (180°C).

  2. Combine all ingredients in a food processor except for the chocolate chips.

  3. Add chocolate chips and just use a spoon to stir them. 

  4. Pour batter into greased muffin tin (or use muffin liners). Bake for 20 minutes.

  5. Remove from oven, let cool for 30 minutes and store in the fridge for up to 6 days.
