Banana Peanut Butter Chocolate Muffins

Ingredients

  • 220 g oat flour  (ground oats)
  • 110 g peanut butter
  • 60 g maple syrup or sub honey or agave syrup
  • 2 eggs
  • 2 bananas 225g
  • 100 ml oat milk or other type
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 125 g chocolate chunks

Instructions

  1. Preheat oven to 180°C (350° F).

  2. Mash the bananas with a fork. In a bowl, whisk eggs, mashed bananas, oat milk, vanilla extract, maple syrup and peanut butter.

  3. Add oat flour, baking powder and mix until well-combined. Add chocolate chips (leave some for decoration) and mix.

  4. Pour batter into greased muffin tin (or use muffin liners). Decorate with the rest of chocolate chips.

  5. Bake for 20-22 minutes. Remove from oven, let cool completely and store for up to 6 days.

  6. Tip: warm the muffins for few minutes in the oven each time before consuming for a fresher texture
