Heat some oil in a saucepan, add tomatoes cut in half and grated, red pepper, ground black pepper, salt, ground ginger, ground red pepper, cover and leave for 15 minutes.
In a bowl, combine chickpea flour, water and salt.
In a nonstick pan, heat the olive oil over medium heat, pour in the batter and cook for 5 minutes on each side. ( repeat this process until there is no batter left)
Place the crust on a baking sheet. Top with onions, tomato sauce, shrimp, mushrooms and cheese. Bake in a pre-heated oven at 350°F for 10-15 minutes.
