Chocolate Chickpea Blondies

Ingredients

  • 1 can (240g) chickpeas drained and rinsed
  • 100 g peanut butter or almond butter
  • 50 g maple syrup or agave or honey if you're not vegan
  • 35 g brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 3 tbsp almond flour or almond meal
  • 70 g chocolate chips or chopped chocolate

Instructions

  1. Preheat oven to 180°C (350° F).

  2. In a food processor, mix all ingredients except chocolate chips until reaching a smooth batter.

  3. Add in chocolate chips/chunks and mix with a spoon or spatula.

  4. Pour the batter into greased pan (or lined with parchment paper) and spread evenly.

  5. Bake for 25 minutes. Let it cool before cutting into squares. Store in the fridge for up to 5 days.
