Chocolate Energy Balls

Ingredients

  • 10 pitted dates
  • 1/4 cup peanut butter 60g
  • 1/4 cup almond flour 20g
  • 1/4 cup sunflower seeds 30g
  • 1/4 cup pumpkin seeds 30g
  • 40 g Dark chocolate
  • 1 tsp vanilla extract

Instructions

  1. Soak pitted dates in warm water for 15 minutes.

  2. Drain the dates, add them into a food processor with the rest of the ingredients except chocolate and pulse until everything is combined.

  3. Roll mixture into even balls.

  4. Melt the chocolate with some coconut oil and dip the balls in the melted chocolate until they are completely covered. Optional: sprinkle some shredded coconut or sesame seeds on top.

  5. Place them on a large plate and then in the refrigerator for 30 minutes.

  6. Place balls into an airtight container and store in the fridge for a week.
