Chocolate Walnut Banana Bread

Ingredients

  • 190 g oat flour
  • 100 g almond flour
  • 3 tbsp coconut oil
  • 3 tbsp peanut butter
  • 3 ripe bananas 300g
  • 2 eggs
  • 100 ml oat milk  or another type
  • 60 g packed brown sugar 
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 60 g chocolate chips
  • some walnuts

Instructions

  1. Preheat oven to 180°C (350° F).

  2. Mash the bananas with a fork or in a blender/food processor. In a bowl, whisk eggs, mashed bananas, oat milk, vanilla extract, packed brown sugar and melted coconut oil with peanut butter.

  3. Add oat flour, almond flour, baking powder and mix until well-combined. Add chocolate chips and mix.

  4. Pour the batter into greased loaf tin (or lined with parchment paper), add some walnuts on top and bake for 1 hour.
