Cloud Eggs Recipe

Servings: 3 eggs

Ingredients
  

  • 3 large eggs
  • ¼ teaspoon salt
  • 30 grams grated Parmesan cheese Optional
  • Optional: herbs, avocado, toast

Method
 

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. Separate the egg whites from the yolks, placing the yolks in a small bowl.
  3. Add the salt to the egg whites and beat until stiff peaks form.
  4. Fold in the Parmesan gently with a spatula.
  5. Spoon the egg whites into three mounds on the tray and create a small well in each.
  6. Bake for 5–6 minutes.
  7. Gently place a yolk into each well and bake again for 5–6 minutes.
  8. Serve warm with herbs and toast if desired.

Notes

  • Feel free to swap the Parmesan for another hard cheese like Gruyère or Pecorino
  • These are best enjoyed right out of the oven while they’re warm and fluffy
