COCONUT FLOUR CHOCOLATE CAKE

Ingredients

  • 1 ripe banana, mashed
  • 3 eggs
  • 5 tbsp melted coconut oil
  • 1/2 cup peanut butter
  • 1 tsp vanilla extract
  • 1/3 cup cane sugar or coconut sugar
  • 1 1/3 cup coconut flour
  • 1 cup cornflour
  • 2 tsp baking powder
  • 100 g dark chocolate ≈1/2 cup

Instructions

  1. Preheat oven to 350° F (180°C).

  2. In a bowl, whisk eggs, banana, vanilla extract, coconut oil, cane sugar and peanut butter. Add coconut flour, cornflour, baking powder and mix until well-combined.

  3. Pour batter into greased cake pan. Bake for 25-30 minutes.

  4. Melt chocolate with 1 tbsp coconut oil. Allow the cake to cool before decorating with chocolate.
