Dark Chocolate Avocado Truffles

Ingredients
  

  • 2 ripe avocados
  • 110 g dark chocolate 4 oz
  • 2 tablespoon honey or more/less to taste
  • 1 teaspoon vanilla extract optional
  • 2-3 tablespoon cocoa powder for coating

Method
 

  1. Melt the dark chocolate and set aside.
  2. In a food processor, combine avocado, melted chocolate, honey, and vanilla. Blend until smooth and creamy.
  3. Line a small glass container or loaf pan with parchment paper. Pour in the mixture and flatten with a spatula.
  4. Cover and freeze for 3 hours, or until firm enough to cut.
  5. Cut into bite-sized pieces and roll in cocoa powder until fully coated.
  6. Store in the fridge for up to 1–2 weeks.

Notes

  • Adjust the sweetness to your liking. Taste the mixture before freezing.
  • Use very ripe avocados for best texture.
