EASY SPRING SALAD

Ingredients

  • 6 cherry tomatoes
  • 1 cucumber, sliced
  • 1/2 avocado
  • 1 steamed artichoke
  • 1 cup mushrooms, sliced
  • 1 zucchini, thinly sliced
  • 1 small onion, sliced
  • 2 hard-boiled eggs
  • 2 tbsp olive oil
  • sea salt
  • pumpkin seeds

Seasoning

  • 2 tbsp olive oil
  • 1 tsp white vinegar
  • 1 tsp lemon juice
  • 1/4 tsp black pepper
  • sea salt

Instructions

  1. Heat some oil in a saucepan over medium heat, add mushrooms and zucchini, allow to brown and season with salt.

  2. For dressing, combine olive oil, white vinegar, lemon juice, black pepper and salt. 

  3. Season each ingredient seperatly except for the mushrooms and zucchini.

  4. Add all ingredients to plate and sprinkle pumpkin seeds on top
