Healthy Snickers Bars

Ingredients

Base

  • 40 g almond flour
  • 75 g oat flour
  • 75 g ground cashews or other nuts
  • 30 ml melted coconut oil 25 g
  • 2 tbsp maple syrup or honey / agave
  • 1/4 tsp sea salt
  • 1-3 tbsp almond milk or other type

Caramel layer

  • 225 g pitted dates soaked for 5 minutes in hot water then drained
  • 4 tbsp peanut butter
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 50 ml almond milk or other type

Top layer

  • 40 g roasted peanuts
  • 80 g dark chocolate

Instructions

For base layer

  1. In a bowl, combine all base layer ingredients listed above until everything is well incorporated.

  2. Line a baking pan with parchment paper and spread the base evenly on the surface. Place in the freezer while you are preparing the caramel layer.

For Caramel layer

  1. In a food processor, mix all the caramel ingredients listed above until reaching the right consistency.

  2. Pour the caramel mixture on top of the base, spread the peanuts on top and put in the freezer for at least 1 hour (you might want to leave it for several hours to allow it to harden enough).

For top layer

  1. Once hardened enough, remove from the freezer and cut into even bars. Put back into the freezer while you melt the chocolate.

  2. Melt the chocolate until liquid.

  3. With the help of 2 forks, place the bars one by one into the melted chocolate bowl and coat in all sides. Sprinkle some sea salt on top or whatever you prefer.

  4. Place the bars back into the freezer until they harden.

  5. You can store them in the fridge for up to a week or the freezer for up to 1 month or longer.
