Nut and Seed Granola

Ingredients

  • 1 ripe banana mashed
  • 1/4 cup melted coconut oil 50g
  • 3 1/2 cup rolled oats 270g
  • 1/2 cup crushed walnuts 70g
  • 1/2 cup crushed almonds 70g
  • 1/4 cup pumpkin seeds 40g
  • 1/4 cup sunflower seeds 40g
  • 1 tsp vanilla extract
  • 1/4 cup packed brown sugar 45g

Instructions

  1. Preheat oven to 180°C (350° F).

  2. In a large bowl, combine all ingredients together.

  3. Line a baking sheet with parchment paper, pour mixture on it and spread it in a thin layer.

  4. Bake for 25 minutes at 180° C (350° F) (stirring frequently) until the granola is golden.

  5. Let it cool completely. Store in an airtight container for up to a week. Enjoy!
