RAINBOW BOWL

Ingredients

  • 1 cucumber diced
  • 10 cherry tomatoes
  • 2/3 cup radish sliced
  • 200 g shrimp peeled leave some with the shell to decorate
  • 1 cup mushrooms sliced
  • 1 small green pepper sliced
  • 1 small onion diced
  • 200 g cooked pasta
  • 1/2 avocado diced
  • 2 tbsp olive oil
  • sea salt
  • chopped parsley

Seasoning

  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp mustard
  • 1 tsp white vinegar
  • 1 tsp lemon juice

Instructions

  1. Heat some oil in a skillet over medium heat, add mushrooms, allow to brown and season with salt. 

  2. In another skillet, heat olive oil over medium heat, add shrimp, green pepper, salt and let it cook for few minutes. 

  3. For dressing, combine olive oil, white vinegar, lemon juice, mustard and salt. 

  4. In a large bowl, combine cucumber, cherry tomatoes cut in half, radish, cooked shrimp, mushrooms, green pepper, onion, pasta, chopped parsley and avocado.

  5. Add dressing to the mixture and gently combine.
