Sourdough Cheese Crackers (No Added Flour)

These crispy, cheesy sourdough crackers are the perfect way to use up your sourdough discard, no added flour needed! Quick, easy, and super addictive.

Ingredients

  • 30 g butter, melted 2 tbsp
  • 200 g sourdough starter (discard or active) ¾ cup + 2 tbsp
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp dried oregano or any herbs of choice
  • 50 g finely grated Parmesan cheese ½ cup

Instructions

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a medium bowl, mix the melted butter, sourdough starter, salt, garlic powder, oregano, and Parmesan cheese until smooth.
  3. Pour the mixture onto the prepared baking sheet and spread it out as thinly and evenly as possible. Use a spatula to get the layer very thin, this ensures crispy crackers.

  4. Bake for 10 minutes. Remove from oven and use a pizza cutter or knife to score the crackers into small squares.
  5. Return to the oven and bake for another 20 minutes. Keep an eye on them, remove any crackers that brown too quickly around the edges and let the rest finish baking.

  6. Once golden and crisp, remove from oven and let cool completely. They’ll crisp up even more as they cool.

Recipe Notes

If your crackers lose their crisp after a day or two, pop them back into a 180°C (350°F) oven for a few minutes and they’ll crisp right back up.
