In a large skillet, heat olive oil over medium heat. Add mushrooms, shrimp, salt and let it cook.
Heat some oil in a saucepan, add tomatoes cut in half and grated, green pepper, ground black pepper, salt, ground red pepper, cover and leave for 15 minutes.
In a bowl, combine spelt flour, salt and dried thyme.
In another bowl, stir together water, yeast and sugar. Let it sit for 5 minutes.
Mix everything together and add olive oil. When everything is combined, start kneading the dough with your hands.
Cover with a towel and let it rest for around an hour.
Line a baking sheet with a floured parchment paper, place dough in the middle and use your hands to form a heart shaped crust.
Bake in a pre-heated oven at 400°F for 10-15 minutes.
Flip the crust to the other side, top with tomato sauce, onion, mushrooms, shrimp, cherry tomatoes and cheese. Bake again for another 10-15 minutes.
