Banana Bread

Ingredients

  • 2 bananas 310g
  • 2 eggs
  • 250 g oat flour
  • 55 g agave syrup or honey or maple syrup
  • 50 g coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda

Instructions

  1. Preheat oven to 180°C (350° F).

  2. Mash the bananas with a fork. In a bowl, whisk eggs, mashed bananas, agave syrup, vanilla extract, and melted coconut oil.

  3. Add oat flour, baking soda, baking powder and mix until well-combined.

  4. Pour the batter into greased loaf tin (or lined with parchment paper), and bake for 45 - 50 minutes.
