Chocolate Chips Banana Muffins

Ingredients

  • 2 bananas 210 g
  • 2 eggs
  • 35 g brown sugar
  • 1 tsp vanilla extract
  • 90 g coconut oil
  • 90 g greek yogurt
  • 200 g whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 100 g dark chocolate chunks/chips

Instructions

  1. Preheat oven to 180°C (350° F).

  2. Mash the bananas. In a bowl, whisk eggs, mashed bananas, vanilla extract, brown sugar, greek yogurt and melted coconut oil.

  3. Add whole wheat flour, baking powder, baking soda and mix until well-combined. Add chocolate chips and mix.

  4. Pour batter into greased muffin tin (or use muffin liners).

  5. Bake for 30 minutes. Remove from oven, let cool completely and store for up to 6 days or freeze for a month.

  6. Tip: warm the muffins for few minutes in the oven each time before consuming for a fresher texture or microwave.
