Healthy Lemon Loaf Cake (gluten free and sugar free)

Ingredients

  • 2 eggs
  • 1/3 cup greek yogurt (80g)
  • 1/3 cup agave / maple syrup or honey (100g)
  • 1/4 cup lemon juice (60ml)
  • zest of 1 lemon
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 1/4 cup coconut oil (50g)
  • 2 cups oat flour (190g) (ground oats)
  • 1 tsp baking powder
  • 1 tsp baking soda

Frosting

  • 1/4 cup cream cheese (55g)
  • 1 tbsp lemon juice
  • 1 tbsp agave / maple syrup or honey

Instructions

  1. Preheat oven to 180°C (350° F).

  2. In a bowl, whisk eggs, greek yogurt, maple syrup, lemon juice, lemon zest, salt, vanilla extract and coconut oil.

  3. In another bowl, combine the dry ingredients: oat flour, baking powder and baking soda.

  4. Combine the wet ingredients with the dry ingredients.

  5. Pour the batter into greased loaf tin (or lined with parchment paper), and bake for 40 minutes.

Frosting

  1. Whisk together cream cheese, maple syrup and lemon juice.

  2. When the cake is cooked, let it cool completely before adding the frosting on top.

  3. Tip: Store in the fridge and warm in the oven or microwave before consuming for a fresher texture.
