Ingredients
Method
- Preheat oven to 180°C (350° F).
- In a bowl, whisk eggs, greek yogurt, maple syrup, lemon juice, lemon zest, salt, vanilla extract and coconut oil.
- In another bowl, combine the dry ingredients: oat flour, baking powder and baking soda.
- Combine the wet ingredients with the dry ingredients.
- Pour the batter into greased loaf tin (or lined with parchment paper), and bake for 40 minutes.
Frosting
- Whisk together cream cheese, maple syrup and lemon juice.
- When the cake is cooked, let it cool completely before adding the frosting on top.
- Tip: Store in the fridge and warm in the oven or microwave before consuming for a fresher texture.
