Healthy Lemon Loaf Cake (gluten free and sugar free)

Ingredients Method

Ingredients
  

  • 2 eggs
  • ⅓ cup greek yogurt (80g)
  • ⅓ cup agave / maple syrup or honey (100g)
  • ¼ cup lemon juice (60ml)
  • zest of 1 lemon
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract
  • ¼ cup coconut oil (50g)
  • 2 cups oat flour (190g) (ground oats)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
Frosting
  • ¼ cup cream cheese (55g)
  • 1 tablespoon lemon juice
  • 1 tablespoon agave / maple syrup or honey

Method
 

  1. Preheat oven to 180°C (350° F).
  2. In a bowl, whisk eggs, greek yogurt, maple syrup, lemon juice, lemon zest, salt, vanilla extract and coconut oil.
  3. In another bowl, combine the dry ingredients: oat flour, baking powder and baking soda.
  4. Combine the wet ingredients with the dry ingredients.
  5. Pour the batter into greased loaf tin (or lined with parchment paper), and bake for 40 minutes.
Frosting
  1. Whisk together cream cheese, maple syrup and lemon juice.
  2. When the cake is cooked, let it cool completely before adding the frosting on top.
  3. Tip: Store in the fridge and warm in the oven or microwave before consuming for a fresher texture.

Ingredients Method

Ingredients
  

  • 2 oeufs
  • 80 g de yaourt grec
  • 100 g de sirop d'agave / d'érable ou miel
  • 60 ml de jus de citron
  • Zest d'un citron
  • ¼ c.c. de sel
  • 1 c.c. d'extrait de vanille
  • 50 g d'huile de noix de coco
  • 190 g de farine d'avoine (avoine moulue)
  • 1 c.c. de levure chimique
  • 1 c.c. de bicarbonate de soude
Glaçage
  • 55 g de fromage frais
  • 1 c.s. de jus de citron
  • 1 c.s. sirop d'agave / d'érable ou de miel

Method
 

  1. Préchauffer le four à 180 ° C.
  2. Dans un bol, fouetter les œufs, le yaourt grec, le sirop d'érable, le jus de citron, le zeste de citron, le sel, l'extrait de vanille et l'huile de coco.
  3. Dans un autre bol, mélanger les ingrédients secs: farine d'avoine, levure chimique et bicarbonate de soude.
  4. Mélanger les ingrédients liquides avec les ingrédients secs.
  5. Versez la pâte dans un moule à cake préalablement graissé (ou utiliser du papier parchemin), et cuire au four pendant 40 minutes.
Glaçage
  1. Fouetter ensemble le fromage frais, le sirop d'érable et le jus de citron.
  2. Lorsque le cake est cuit, laissez-le refroidir complètement avant d'ajouter le glaçage sur le dessus.
  3. Conseil: conserver au réfrigérateur et réchauffer au four ou au micro-ondes avant de consommer pour une texture plus fraîche.
